In what seems to be Cochon’s signature dish for now, Slow Roasted Pork Shoulder over Lentils duPuy, roasted brussels sprouts and poached egg ($20) certainly was worthy of top billing. Giuffi cures the shoulder in seasonings for two days and then slow-roasts from 12 to 15 hours. The pork was tender and proved Chef does have a way with pig.Minor quibble is that there should have been a few more brussels sprouts, but the still-liquid yolk oozed into the sauce and melded well with the lentils. Good execution. “
