Chifa, Jose Garces' Cantonese-Peruvian restaurant that's opening tomorrow, is arguably February's most hotly anticipated opening (and maybe even 2009's). Over at Meal Ticket, they were lucky enough to get a sneak preview and taste. They have a write-up of the space ("warmly lit and dressed in burnished gold and red tones, with roomy, shimmering aqua booths "), but more important is the lengthy description of the food:
House-made sriracha sauce, served with the signature Chifa Chicken, an air-chilled organic bird from Giannone in Canada. Impossibly crisp, glassine skin over tender meat. This will be a must-have.
And that's just the first of many dishes that they describe in great detail. (We'd like all of it now, please!) It's going to be exciting to see opinions trickle in over the next few weeks and months.
