Zavino, the new pizza and wine bar opening in October in the former check-cashing store at 13th and Sansom Streets, has released some details on their menu and concept. What do you need to know?
The Food: Steve Gonzalez, who worked for Marc Vetri and bopped around Italy and Spain, is the chef and also an owner. There will be snacks, pasta, charcuterie, cheese and, of course, pizzas, baked in a wood-burning oven that reaches 900 degrees. Gonzalez says of the pizza genre via the press release, "Our crust will not be too thin or too thick, it will be somewhere right between Neapolitan and Sicilian, crunchy, and tender, and just exactly right." Pizzas will be $5 to $12; other dishes will run $3 to $20.
• Artichoke pizza with thinly sliced artichokes, Swiss chard and pecorino Romano cheese • House-made beef ravioli with brown butter and sage
• Roasted red and golden beets with pistachios and goat cheese
• Roasted lamb with fried eggplant and mint
• Traditional panzanella, a tomato and bread salad
• Cheese and charcuterie will be available a la carte
Three classic pizzas will always be available, plus other pizzas will be added seasonally:
• Rosa, with tomato sauce and roasted garlic
• Margherita, with tomato sauce and buffalo mozzarella, topped with fresh basil
• Polpettini, tomato sauce and provolone cheese with veal mini-meatballs
The Drinks: Negronis, bellinis and "an ever-evolving assortment of wine and beer offerings."
The Decor: "A simple, rustic feel with an original brick wall, large picture windows, a long bar and a large outdoor cafe." The Lone Paparazzo has some renderings.
The Hours: 5 p.m. until 2 a.m. daily and they won't take reservations.
