What to Eat at Percy Street Barbecue, Opening Tomorrow

Photo: Kirsten Henri

Percy Street Barbecue, the hotly anticipated barbecue joint from the folks behind Zahav, Xochitl and the previous rendition of Marigold Kitchen, is on the cusp of opening its doors and allowing the meaty, smoky fragrance that's been building up inside to come billowing out. Chef Erin O'Shea kindly took some time out of her pre-opening frenzy to rustle us up some samples of the Texas-style brisket, smoked sausage and other dishes from the very concise menu to photograph.

View the slideshow to find out more about the lean, moist and burnt ends of the brisket and if you're interested in learning more about the barbecue-tasting road trip the crew took to Texas a few months back, watch the documentary by Chandler Kauffman. Get your first fix of Percy Street on Tuesday, November 17 at 5 p.m.
