Spinal Tapas Goes on Tour to Peru

Spinal Tapas, the dinner party cooked and hosted by Philadelphia Weekly chef-scribes Brian McManus and Tim McGinnis, will put on its next event “Aventura y Comida en Peru: Food, Music, and Booze Inspired by Peru” on Saturday, April 17 at Philly Kitchen Share. Previous dinners, which involve McManus and McGinnis preparing a multi-course meal for 16 guests paired with beer or booze, have focused on barbecue and PW’s Must Eats issue. This time, the boys are heading south, way south.

Aided by Brad and Angelique Jennings of Central PA’s Humble and the Rabbit Catering, the duo plan the following:

The menu will include feature items like the chicha morada, a purple corn and citrus punch infused with cinnamon, star anise and spiked with the Peruvian brandy pisco; a duo of causas, or saffron potato purees, one topped with smoked baby octopus in a lemon garlic aioli and the other with Inca Kola-braised pulled pork and salsa criolla; tiradito de pescado, sashimi-style striped bass ceviche with salsa huancaina and lime juice; anticucho de corazón, grilled chicken and beef heart skewers marinated in a vinegar and pepper paste; lomo saltado, grilled soy-glazed skirt steak with twice-fried potato bites; and cusco chocolate cake, dense and rich with passion fruit.

Dinner will be paired with “lager with caramel notes similar to those typical of the region.”

There are two seatings - 5 p.m. and 8 p.m.- of 16 people each. The dinner is $50, all-inclusive; tickets can be purchased online through Philly Kitchen Share’s website.
