Adsum, the long awaited neighborhood bistro from former Lacroix chef Matt Levin, finally opens today at 4 p.m. Levin hired Preston Eckman, the talented mixologist formerly of APO Bar and Lounge, to create his restaurant’s cocktail list and oversee its bar operations. Inspiration for the drinks Eckman has created range from Ernest Hemingway and Tennessee Williams to Philadelphia Distilling Company (makers of Blue Coat Gin and Vieux Carré Absinthe) and public transportation. Each cocktail is comprised of fresh fruit juices and housemade mixers and infusions. Yesterday Grub Street caught up with Eckman as he schooled Adsum’s staff, walking them through the cocktail list pour-by-pour and drink-by-drink and snapped a few pictures.
