Meritage’s Ann Coll has made a big splash in recent months serving her take on Korean tacos and Korean fried chicken, but in addition to these weekly specials, she’s an incredibly skillful chef with a broad culinary repertoire that spans Asian, French and American palates. Her latest menu, which she’s just started serving, showcases her range of influences and talents. The new fall menu’s highlights include Hudson Valley Fois Gras Dumplings, with browned black truffle butter, Truffled Potato Leek Soup, with sunny side up quail egg, Escargot with fermented Black Bean sauce, sautéed spinach, and puff pastry, Roasted Cabbage Wrapped Monkfish with roasted new potatoes, truffle beurre blanc and sautéed mushrooms, and Grilled Herb Crusted New Zealand Lamb Chops with cauliflower puree, artichokes, fava beans, and roasted carrots.
