Since opening his P.Y.T. a year and a half ago, Tommy Up has been busy cranking out one fantastic burger creation after another. There’s been a banh mi burger, truffled lobster burger, Korean short rib burger, waffles and fried chicken burger and the list just keeps going on. So what’s next for the Piazza’s burger baron? Pierogies! Sure he’s been serving them almost since opening, but after partnering Polish Goodness Pierogies Nicole Yates a couple weeks ago, the modest stuffed dumpling has taken a major evolutionary leap. For P.Y.T. Yates has created a bacon cheeseburger pierogie and a pumpkin cheesecake pierogie, both of which Up says are so popular that he can barely keep in stock. “We just keep pumping them out,” Up told Grub Street. “They’re phenomenal, really fresh and we just keep selling out of them.”

Going forward, Up isn’t sure if he will continuously switch up his pierogie offerings at the same pace as his burgers. “That’s sort of been the idea,” Up said. “Right now we’re happy with what Nicole’s producing, but she’s got serious perogie skills and a lot of good ideas. So I imagine we’ll be incorporating some other flavors at some point.”
