Seriously, what’s the deal with all these restaurants trying to squeeze their openings into the last few weeks of the year? Is it a matter of saving face after promising that an opening was just weeks away for six or more months? Or more simply an opportune time for restaurateurs to iron out all the kinks while most diners are up to their ears in the holiday grind? Either way, last night Matador, the Mexican number that Grub Street mentioned back in May was coming to the former Freehouse space in Wayne, had its soft opening, according to an updated posted on Mainline Dine. It joins 943, Salt & Pepper and The Corner in a last second dash to open before the year’s end. Starr’s Dandelion and Mike Stollenwerk’s revived Little Fish are both aiming to enter that race next week. It would be a true Christmas miracle if long delayed restaurants Speck and Fathom Seafood House jumped in too.
