Top Chef Kevin Sbraga Previews Dishes From His Upcoming Restaurant

Last night we saw hometown heroine Jennifer Carroll bow out of Top Chef: All-Stars after getting, as one of her Twitter followers put it, “all Northeast Philly on the judges.” Tonight Philly’s other Top Chef star and champion of season 7, Kevin Sbraga, is giving a preview of some of the dishes he plans to serve at his forthcoming restaurant, which still does not have a name or location, at Azalea Restaurant at Old City’s Omni Hotel. “The menu reads very simple and plain, and will continue to be simply written when the restaurant opens,” Sbraga told Grub Street. “But there will be a level of surprise in each dish.” Highlights include squab, cous cous, chocolate and orange, and a most trendy salted caramel pot de crème dessert that Sbraga said will be executed tonight in the kitchen by his wife Jesmary.
