Lotus Farm to Table, the 32-seat BYOB in suburban Media, PA, has appointed Michael Giletto as its new chef. Giletto, who first fell in love with food as kid growing up on his family’s New Jersey blueberry farm, previously held stints at the Pine Hill Golf Club in Pine Hill, NJ and Gourmet Butterfly Special Events. He’s also appeared on Food Network shows Restaurant Impossible, Chopped and Iron Chef America, according to a press release. Chenges he brings to the Lotus menu include a tea-infused duck breast, served with roasted squash and brussels sprouts, a chrysanthemum tea smoked tuna with heritage hen egg, and green pepper cress, plus housemade mozzarella and hand-churned agave butter.
