The specifics on Matt Levin and Kevin Sbraga’s collaborative dinner at Adsum on April 25 are hazy at best, and yet reservations are being booked up quickly. Levin has three seatings planned. The middle one at 8 p.m. is almost completely filled. The 6 p.m. and 10 p.m. seatings are filling up, but just not as quickly. And this is all before any menu details or price points have been announced. “Obviously I want to give him the opportunity to do some of things he’s going to do at his upcoming restaurant,” Levin told Grub Street. “It helps keep his name out there while things come together for him.”
The two chefs who’ve been “friends for forever,” as Levin put it, frequently crossed paths when Sbraga ran the kitchen at the Grill at the Ritz-Carlton (now 10 Arts where fellow Top Chef alum Jennifer Carroll rules the roost) and Levin was at the helm of Lacroix at the nearby Rittenhouse Hotel. Levin said the two have been kicking collaboration ideas around for months, but only recently started trying to make it really happen.
So far the dinner will consist of four courses. Levin will prepare two, and the Top Chef champ will cook the other two. Levin adds that since both want to cook a whole pig, they may work together on of the dinner’s courses. He hopes to keep price points around $50.
