Last year we told you that Mark Coates, the pitmaster behind dearly departed Bebe’s Barbecue in the Italian Market (now Paesano’s) and more recently chef at Fergie’s Pub, had purchased an old Tastykake truck that he intended to convert into a smokehouse on wheels. Well, according to Meal Ticket, Coates is following through with that plan. In conjunction with Wishing Well’s chef-owner Carmen Cappello, whose discretely tucked away smoker near ninth and Fitzwater streets has been wafting the sweet smell of smoldering hickory throughout the neighborhood in recent months, Coates is rolling out the Smoke Truck (how fortuitous the announcement came on 4/20) in weeks to come. It’s great news for Philly’s blossoming food truck scene, but a bummer for those who’ve grown fond of Coates’ smoked and southern-fried fare at Fergie’s. [Meal Ticket]
