Mark Coates Exits Fergie’s to Roll With a New BBQ Truck

Last year we told you that Mark Coates, the pitmaster behind dearly departed Bebes Barbecue in the Italian Market (now Paesanos) and more recently chef at Fergies Pub, had purchased an old Tastykake truck that he intended to convert into a smokehouse on wheels. Well, according to Meal Ticket, Coates is following through with that plan. In conjunction with Wishing Wells chef-owner Carmen Cappello, whose discretely tucked away smoker near ninth and Fitzwater streets has been wafting the sweet smell of smoldering hickory throughout the neighborhood in recent months, Coates is rolling out the Smoke Truck (how fortuitous the announcement came on 4/20) in weeks to come. Its great news for Phillys blossoming food truck scene, but a bummer for those whove grown fond of Coates smoked and southern-fried fare at Fergies. [Meal Ticket]
