Longtime Garces chef Dave Conn, has moved on from the Iron Chef’s JG Domestic and has left Philly, but he hasn’t exited the Iron Chef’s empire. Garces has put Conn in charge of the food at his new hotel project, the Drinkwater, in Scottsdale, AZ. Matt Hiebsch, a former Garces sous chef, who did some time at Distrito prior to being brought over last year to open JG Domestic, was recently bumped up to chef de cuisine. Before coming to Philly, the C.I.A. grad worked at New York’s River Cafe and Colicchio & Sons. The chef told Grub Street he’s excited to introduce fish cheeks as a component to a cod dish he’s working on for the restaurant’s "Whole Animal" menu feature.
