Heirloom, the new regional American-focused BYOB from longtime hospitality vets Chef Al Paris and Robert Bynum that’s been coming together in the former home of the Shundeez Market on Germantown Ave. in Chestnut Hill, is looking to open next week. As its name suggests the restaurant will put an emphasis locally sourced and authentic American ingredients. Reclaimed wood furniture, including a large communal table, bamboo floors, and hand-stacked Pennsylvania blue slate will create the cozy, 50-seat restaurant’s look and feel, according to a prepared statement. A rep for Heirloom tells Grub that Chef Paris is still in the throes of building his menu, but some dishes may include a warm heirloom tomato and Burrata salad; diver scallops with pork belly; short rib of beef with sassafras glaze; and heirloom grits crusted black bass.
