Looks like 10 Arts pastry chef Monica Glass is following Jennifer Carroll’s cue, and cutting loose from the local Eric Ripert outpost at the Ritz-Carlton. That’s what Philly Chit Chat’s HughE Dillion’s reporting over at Phillymag today. Glass, who charmed the city’s collective sweet tooth with her over-the-top desserts and confections, is reportedly moving on to head up pastry productions at Mike Stollenwerk’s Fish. Meanwhile, the Insider reports that former Talula’s Table and later Talula’s Garden chef Matt Moon is taking on a consulting role at Fairmount’s Bishops Collar. In the new year, he will shift over to Sampan, where he will serve as sous chef. [Phillymag; Insider]
