Top Chefs Chew the Fat at Amis’ Industry Night

Though geese and goats and the crew from New York’s Casa Mono were the main draw for Amis’ monthly Industry Night party last evening, the appearance of two Top Chef winners arguably stole the show. While restaurant insiders stuffed their faces with everything from Chef Brad Spence and company’s chestnut bucatini with goose ragu and prunes, and crispy goose leg with blood orange and coriander marmalade, to the goat loin tar tar with cardamom goat yogurt, and goat neck paella served up by visiting chefs from Casa Mono, where Spence cut his culinary teeth prior to joining the Vetri family, Philly-based Top Chef champ Kevin Sbraga chilled with Ilan Hall, the victor of the Bravo reality show’s second season, and a Casa Mono alum. Of the meeting, Spence tweeted, “My two idols! I can sleep well tonight!”
