Details Emerge on What Jose Garces Is Bringing to Palm Springs

A while back Grub mentioned that Philly-based chef Jose Garces was headed west for a nebulous project, or series of projects at Palm Springs’ Ace Hotel. And finally, today some new details have come to light about what he has in store. The Iron Chef has partnered with Sydell Group to handle the food and beverage operations at what will be the Saguaro, a Joie de Vivre hotel that will draw inspiration from the surrounding Mojave Desert landscape. According to a prepared statement, Garces will be bringing Tinto, the Basque Country-inspired “pintxos y vinos” concept that was his sophomore effort in the City of Brotherly Love to the hotel, as well as El Jefe, a more casual mod-Mex frontier bar.

Garces will also oversee the hotel’s room service, and poolside food and beverage service. The hotel is on track for an opening later this month, and the restaurants shortly thereafter. With 13 restaurants operating in Philadelphia, Chicago and Scottsdale, AZ as well as plans for several more opening later this year at Atlantic City, N.J.’s Revel Casino, it seems Garces is well on his way to conquering the world one resort at a time.
