Brunch options are blowing up as we head into spring 2012’s first weekend. NoLibs tapas joint Bar Fedinand sends word that it’s bringing back brunch service on Sunday, which apparently has been on hiatus since summer. Chef James Howard put together a whole new menu that boasts such Spanish-inspired creations as Torrija Rellena de Manzana, a Spanish French toast with cider-soaked brioche stuffed with sautéed apples and golden raisins, and topped with whipped cream and brown sugar apple syrup drizzle; Huevos con Morcilla Hash, poached eggs over Morcilla blood sausage hash and topped with a Piquillo Aioli; and Egg Sandwich Española, brioche sliders with the classic Spanish potato omelette, house-smoked bacon, slow roasted tomatoes and aioli. They have bottomless Bloody Marys and mimosas too. Check out the full menu here.

Newly opened Rex 1516 is kicking off brunch service this weekend too. Chef Regis Jansen continues pushing the same Southern styled approach that he developed for the restaurant’s dinner menu with shrimp and grits with fried eggs, roasted tomatoes, blackened shrimp and crispy pork belly; a house omelette with duck confit, chaurice sausage, taleggio, and sautéed spinach; and cornmeal waffles with fresh fruit and orange infused maple syrup. For your daytime drinking pleasure, Rex’s GM, Heather Rodkey, will have Southern Shandies, Oskar Blues Mama’s Little Yella Pills, lemon, and ginger, and basil mimosas at the ready.
