Even amidst the reign of Cochon 555 and Pigg, we’re still surprised to see a Southern “pulled pork sundae” show up at Lucques, of all places, but Suzanne Goin is hatching just such a creation this Sunday. The chef and sommelier-partner Caroline Styne plan to hold a Tennessee picnic on June 3, inspired by Blackberry Farm, a luxury resort and historic farm set in the foothills of The Smokey Mountains in what was once referred to as “The Hog and Hominy State.” And what is the duo fixin’ to serve?

Goin is endowing the pre-fixe dinner, offered from 5:00 to 10:00 P.M. for $45, with dishes like sweet-tea brined fried chicken, succotash salad, and a banana cream pie with bourbon whipped cream and pecans, directing our attention to the aforementioned “sundae” of pulled pork layered with baked beans and cole slaw, served in a glass and eaten with a spoon that has become a cult-classic of sorts down South.
