Along with the 50 or so trucks, vendors and local restaurants that rolling up on Mt. Airy tonight for the latest installment of the Food Trust’s Night Market’s is newcomer Local 215. The newly launched truck and its operators Eric Zolodessy, Alex Buckner, and Jon Murphy, are bent on serving only dishes made with farm fresh goods, and as Zolodessy explains, “being as sustainable as possible.” They are also big on pig. The crew buys hogs whole, breaks them down and uses just about everything. Heads are used to for crispy pork fritters, and off cuts and trimmings go into their handmade sausage.

For their maiden voyage to Night Market, they are planning a scaled back menu that will feature crispy polenta triangles topped with a choice of pork belly, seasonal greens, or torched cheese; the aforementioned pork fritters with a remoulade dipping sauce; and a roasted corn salad with heirloom tomatoes.

After Night Market, the Local 215 crew expects to hit the city’s streets, making regular stops near 33rd and Arch streets, participating in Philly Mobile Food Association roundups, and slinging their farm-to-truck goods at festivals and concerts.
