With a stunning track record that includes stints at such shrines to contemporary dining as Alinea, French Laundry, Charlie Trotter’s Tru and wd-50, Christopher Kearse might be one of the city’s most qualified chefs, and tonight he opens the doors to his debut restaurant Will BYOB on Passyunk Avenue. Kearse told Grub Street that his cozy, 30-seat restaurant serves as both a culmination of his amazing culinary odyssey thus far, and its next logical step. There the chef plans to furnish guests with a fine-tuned menu that blends a seasonal focus with classic French tradition and modern techniques, that’s both awe-inspiring and affordable. Kearse will serve dinner Tuesdays through Sundays, from 5:30 to 10 p.m. On Sundays brunch will be offered from 11 a.m. to 2 p.m., and a four-course, prix fixe tasting menu will be served Sunday nights for $40.
