• On Sunday, February 10, Cochon 555 will make a stop at Chelsea Piers. This ten-city, pork-centric tour brings together five local chefs, five pigs, and five wineries to celebrate nose-to-tail cooking, breed diversity, and family farming for what happens to be the festival’s fifth anniversary. • Tickets are now on sale for Vegas Uncorked, a four-day international food festival filled with dinners, luncheons, and wine tastings. On Saturday, February 23, from 3 to 5 p.m., chef Ben Pollinger and wine director Pedro Goncalves will teach nine couples how to shuck an oyster, prepare a raw bar, and make ideal wine pairings.
