Since that empanada pop-up behind Cuba Libre proved to be a big bust last year, Guillermo Pernot is taking a different route this time around for his month-long celebration of the savory pastry that’s a staple of Cuban cuisine. This year Pernot will crowdsource ideas for empanadas, accepting suggestions via Facebook and Twitter from March 1 through March 9. The three best submissions will be turned into recipes that folks can vote on, again through Facebook, from March 18 through March 22. The most popular choice will then be added to the collection of empanadas that the restaurant will put on the menu in April. We know it’s a ways away, but it’s still worth getting excited about the “Caippy Hour” Happy Hour that all of this leads up to on April 8 for National Empanada Day. That’s when all of Pernot’s empanadas will be available for one dollar each.
