Now Open: Agricola, Providing Good Reason to Roadtrip to Princeton

Agricola, a new farm-fresh focused venture from fast-casual tycoon Jim Nawn, opened softly earlier this week in Princeton, and going forward it will give gastronomads good reason to venture north this spring. French Laundry-trained executive chef and partner Josh Thomsen has partnered with nearby Great Road Farm — less than five miles down the road from the restaurant — in order to cultivate a little bit of the Keller tradition in the Garden State, according to a rep for the restaurant. The menu riffs on rustic American, offering salads, stews, chops and pasta dishes that are composed primarily with locally-sourced or housemade ingredients. Check it out here. Trimmings include a wood-fired oven, open kitchen complete with a chef’s table, a Talula’s -esque farm table, and a bar that emphasizes American spirits, wines and craft beers.
